Fit keeps the whole picture inside the width and height. Fill crops the center to cover that box. Stretch ignores the ratio. You can also scale by a percentage.

This is one tool on purpose. Separate pages for 100×100 and 200×200 would not do anything this page cannot.

Can I crop by hand?

Fill crops from the center. For a face in a fixed frame, use Passport and ID photo size.
